4. After the koji starter is added to the steamed rice, the shubo or sake "mother" is added for healthy and smooth alcoholic fermentation. A large amount of lactic acid produced also helps to suppress the growth of germs in the early stage of sake brewing.

5. Moromi is the core of the sake brewing process where the various enzymes of the koji starter and purely grown sake yeast play an active role. 6. After the fermentation process is complete when the rice mash is aged, the aged mash is squeezed and the solid sake lees and liquid fresh sake are separated and filtered.
